To cook borscht, you will need the following ingredients:
— 2 beets, peeled and grated
— 2 carrots, peeled and grated
— 1 onion, finely chopped
— 2 cloves of garlic, minced
— 2 potatoes, peeled and diced
— 1/2 head of cabbage, thinly sliced
— 1 can of diced tomatoes
— 4 cups of vegetable or beef broth
— 1 bay leaf
— 1 teaspoon of sugar
— Salt and pepper to taste
— Sour cream and fresh dill for garnish
Here are the steps to prepare borscht:
1. Heat some oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until they become translucent.
2. Add the grated beets and carrots to the pot and sauté for about 5 minutes, until they start to soften.
3. Add the diced potatoes, sliced cabbage, and can of diced tomatoes (including the juice) to the pot. Stir everything together.
4. Pour in the vegetable or beef broth and add the bay leaf, sugar, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the vegetables are tender.
5. Taste the borscht and adjust the seasoning if needed. Remove the bay leaf.
6. Serve the borscht hot, garnished with a dollop of sour cream and some fresh dill. It can be enjoyed with a slice of crusty bread.
